Hello! I really want to make this for Thanksgiving this year, but I'm allergic to apricots and dates (all stone fruit). Is there a different dried fruit or dried-fruit-like-thing that would be good here? Like golden raisins or dried cranberries maybe? Any suggestions?

Yes it definitely could be! However, all our recipes are vegetarian, so we don't have a chicken breast recipe to suggest. Sorry!

I would toss the roasted cauliflower with the olive oil, lemon juice, and salt ahead of time but leave the arugula undressed. I'd also store the tahini dressing separately and drizzle it over the salad right before you eat!

Hi! If you want to make ahead for lunch do you go ahead and add the dressing/tahini or would it get soggy? Should I keep it separate until ready to eat?

Hi Beth,

A simple yogurt dressing would be great:
½ cup Greek or plain yogurt
½ tablespoon extra-virgin olive oil
½ tablespoon fresh lemon juice
¼ teaspoon salt
Freshly ground black pepper

or this green goddess: https://www.loveandlemons.com/green-goddess-dressing/
or this cashew cream would work: https://www.loveandlemons.com/cashew-cream/
