In reply to Amy Reynolds. I've made this before omitted the mint and put basil.It was good.I'm having a hard time wrapping my head around mint.If I can ever find it. What does the mint add to the salad over basil? Just curious.

Delicious salad and so many flavors here! Served in bowls with arugula and warm quinoa. Gotta say, the dressing was perfecto!
