Good idea. I’m not vegetarian, but I l think grilled or roasted bell peppers/sweet potatoes/onion/garlic, along with some good hummus make delicious taco fillings. I also love lightly mashing chickpeas with some taco seasoning, putting them on a freshly fried corn tortilla and topping it all
with some slaw and avocado.

In reply to Debbie. Hi Debbie, you can roast the veggies ahead of time and reheat (although they will be more soft that way, but probably fine for tacos). You can make the sauce the day before!
