This was absolutely amazing…I doubled the recipe for a larger crowd…I have also frozen some of the leftovers…Hopefully I can re-eat unfrozen….

Delicious! I bought a corn salad “kit” from my local veggie vendor, and it did not come with a recipe! I went searching for one that had most of the ingredients, and decided on yours as I’ve made some of your recipes in the past. My “kit” did not have as much corn, and it also had a red bell pepper in addition to the jalepeno pepper. I just added about 1/4 cup of the red pepper to the mix. Came out great! I will save this for future batches!

Delicious!! My family loves this (even the kids). Not too spicy, either. I used frozen corn and it turned out perfect.
