I Love grilled eggplant. But when I use my grill pan ( I don’t hv an outside grill) I find the eggplant doesn’t cook thru. Are there any tips when using a grill pan

We grill our eggplant brushed with Bernstein’s Italian. We make extra and cut it into strips with some Balsamic vinegar and have it in a pita pocket with tabouli as leftovers. We don’t salt first ever. From the garden eggplants not bitter.

Salting ahead of time is to pull excess moisture out. Salting because of bitterness makes no sense. You should always season your food anyway.

I’ve made this twice now and the Israeli couscous (vs regular) makes a huge difference in how the salad looks, but not so much in how it tastes, which is fabulous both times! I’ve never been a fan of eggplant, but my parents love it, so I made it. I was so shocked when I tasted it because I loved it so much, so I placed this recipe into my recipe rotation for busy weeknights. Soooooo simple to throw together!

This is excellent!! I did the oven version and I’m looking forward to making it on the grill too.
