Hi Linzie, this recipe makes a really wet dough, which is why we say to transfer it to the bowl with a spatula in step 3. It is too wet to move by hand. The high moisture level is what helps the focaccia bake up with a light, airy texture. Adding more flour would affect the outcome.

Not usually one to review recipes but it’s also not often they fail so bad. I followed instructions exactly, no deviations or winging it, and I had to add so much flour! I weighed out my flour, as recommended, and when the ingredients went into the mixer it just made soup basically. The rest of the instructions and steps were fine but the amount of flour was way off. It also took longer to bake and didnt brown as i would have hoped. Perhaps that was due to my ratios being off with the flour but i did not get the pictured result. In the end I did get bread so at least there was that.

I make this recipe every Sunday for our family dinner. It’s always a hit. I add fresh chopped rosemary and salt flakes. There are never leftovers.
