This recipe was a big fail for me. No matter how much sugar or maple syrup I added, it simply tasted like slightly sweet peanut butter. Definitely needs revision!
Love & Lemons does have another great peanut butter recipe, though - peanut butter granola bars. Out of this world and definitely would recommend those!

This recipe was a fail for me. ,Despite the smooth peanut butter and added oil, the almond flour (I used Bob's Red Mill super fine almond flour) made the final product grainy. Not at all the texture I want in cookie dough. It also was less sweet than I want in a cookie dough-adjacent dessert, and I found the mini chips were too small to lend any flavor. They just kind of disappeared into the grainy blech.

Since almond flour and maple syrup are so pricey, I might try to salvage things. I'll see if I can convert it into some version of the almond-four chocolate chip cookie recipe I really like (for regular, baked cookies).

Meanwhile, there are plenty of wonderful desert recipes on Love and Lemons, including the very similar no-bake peanut butter chocolate chip cookie recipe, which uses oats, is plenty sweet, and has a darn good texture :-)
