I made these during Passover and we had them on matzo. By the time one adds onions, cream cheese, capers and a healthy grind of fresh pepper, these carrots taste remarkably similar to lox! Adding this to my regular Passover line-up. Thanks for another great recipe!

Would this marinade work with balsamic or apple cider vinegar? And cayenne pepper instead of paprika?

These sound absolutely spectacular! I don’t know if my husband would eat them, but I know I would enjoy them. Now all I have to do is find a way to get him out of the house for lunch one day (good luck with that!)…
