Hi Chris, ah sorry about that! A regular blender should do it, but you may have to blend the soup for a while, around 1 to 2 minutes.

Don’t blitz in a regular food processor it leaks everywhere! I used a stick blender instead after cooking. Definitely recommend bashing the lemon grass and (not blitzing)so it can be removed otherwise you’ll have fibrous material which is unpleasant to eat and soup then needs to be sieved.
Will make again as nice flavour but change method.

The taste is interesting, but I cannot get it smooth. After cuisinart, immersion blender and regular blender, it’s grainy. Throwing it out!

Hi Janette, you could do that! I think you'd need to 5x recipe and work in batches. Most blenders won't fit more than 1-2 recipes worth at a time.

Big hit at my dinner party. Everyone loved it! Highly recommended! Thanks for a great recipe.
Even the gourmet chef had nothing but compliments. Since it was my first time making it, followed recipe closely. Perfect

Hi Joan, an immersion blender won't be the best for this one (any decent stand up blender should be fine). You could steam the carrots until they're soft, or make this other carrot soup where the carrots get cooked before blending: https://www.loveandlemons.com/carrot-ginger-soup/

For the Carrot soup, we do not have a vitamix. I am wondering if I need to cook the carrots?
we actually only have one of those immersion blenders (hand held).
