This recipe, along with basically every recipe I’ve tried from Love and Lemons, is incredible! You guys are my go-to for most of my new recipes and I’m never disappointed. The use of fresh, seasonal veggies and the tidbits of great advice sprinkled throughout the recipes (smaller zucchini = better) is so helpful and appreciated! Thank you so much for doing what you do! You’ve been invaluable to me for a long time.

We have a lot of zucchini, so this was probably the 7th different zucchini casserole I’ve made this summer. It was by far the best. I dried out the zucchini on kitchen towels and followed the recipe and brought it to a family dinner. We finished the casserole and everyone was so excited and asked for the recipe. Can you imagine? Excited over a zucchini casserole? Ten out of ten!

This was delicious! I bought 2 squashes and a zucchini at the farmers market and needed to use them. I added more marinara sauce-like a half jar of raos and it was so yummy! This was so reminiscent of lasagna with the flavors -very savory. Luckily I had some lemon pesto to use up too (recipe from half baked harvest) in the fridge so this all worked out so well. Thank you for the recipe I’ll definitely use it again. One note is it didn’t say to add “squash and zucchini” to pesto mix. I added them all together then layered. So yummy.

I made this on Friday – it was delicious! I used 1 yellow and 2 green squash and that generated a little over 4 cups sliced (1lb 3oz).

We paired it with shrimp scampi.

I’ve already shared this recipe with friends as I thoroughly enjoyed it. Thank you!

Made it for my parents and they really loved it:) I made three layers out of it because my casserole dish was smaller, it turned out delicious anyway!
