Meal Prep Ideas: Mediterranean Quinoa Salad

We love this Mediterranean Quinoa Salad as a healthy meal prep recipe. Many of the components - the quinoa, tomatoes, dressing, and the chickpeas - can be made in advance.
recipe Roasted Tomatoes
sliced Persian cucumbers
crumbled feta cheese
pitted and sliced
diced red onion
toasted pine nuts
recipe Italian Dressing
plus 2 additional garlic cloves, grated
Freshly ground black pepper
of red pepper flakes
mixed basil & mint
In a large bowl, combine the quinoa, roasted tomatoes, cucumbers, feta, olives, onion, and pine nuts.
Toss to combine, then drizzle with the dressing and toss again. Sprinkle with the salt, pepper, and a few pinches of red pepper flakes, and toss again.
If you are meal prepping this recipe, add the roasted chickpeas, arugula, and herbs just before serving.
Note: the quinoa and roasted tomatoes can be made up to 3 days in advance and stored in the fridge until ready to use.
Make this recipe vegan by omitting the cheese.
