This pumpkin chocolate chip cookies recipe is the perfect fall treat! Filled with spiced pumpkin flavor and gooey chocolate chips, these easy cookies are soft, moist, and delicious.
Preheat the oven to 350°F and line two large baking sheets with parchment paper.
In a large bowl, whisk together the brown sugar, pumpkin puree, egg, coconut oil, and vanilla. Evenly sprinkle the pumpkin pie spice, baking powder, baking soda, and salt over the mixture and stir to combine.
Sprinkle the flour on top and stir to combine. Fold in the chocolate chips. Use a 2-tablespoon cookie scoop to scoop the dough onto the prepared baking sheets.
Bake for 11 to 13 minutes, or until the cookies are puffed and lightly set. Remove from the oven and let cool on the baking sheets for 10 minutes before transferring to a wire rack to cool completely.
Notes
I recently re-tested and updated this recipe to help the cookies bake more evenly. If you'd like to make the original version, omit the egg and baking powder. Increase the baking soda to 1 teaspoon.
