Preheat the oven to 350°F and grease an 8x4-inch loaf pan. If desired, line the bottom and two long sides with a sheet of parchment paper.
In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, salt, ginger, and nutmeg.
In a large bowl, whisk together the eggs, sugar, applesauce, oil, milk, and vanilla.
Add the dry ingredients to the wet ingredients and mix until just combined, then fold the apples and walnuts into the batter.
Transfer the batter to the prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until the top springs back to the touch and a toothpick inserted comes out clean. I like to check the loaf after 45 minutes. If the top is golden brown, I cover it with foil for the remaining bake time to prevent further browning.
