It is delicious and so easy to make! I made it exactly as the recipe however might not have had the exact amounts.. Did not matter was wonderful. I did seed and use a jalapeño. This is a keeper!

Took me forever simply because I chopped all the veggies by hand, but otherwise so simple. The heat of the chili gave a nice balance to the sweet and tangy. Such beautiful dance of flavors. I first had watermelon gazpacho at a golf club and loved it. This comes close to the same one. Thank you for sharing the recipe..
