While Cinco de Mayo might be a highly Americanized holiday, here in Austin, we’ll take any excuse we can get to stuff things into tortillas. Here are a few of our favorite taco recipes that you should definitely make for your own veggie fiesta:

    These look great. I am always looking for meat free recipes so I will have to try them.

  2. Great recipe for taco, this is a good recipe to try, though I am not a vegetarian, but there is no harm in reducing calories by reducing the amount of meat and increasing vegetable in the family meals

  3. Duh, never thought about vegetarian tacos—How Perfect! I am like one other responder, I am not a vegetarian but I naturally don’t eat a lot of meat.

    These all look so delicious! I’m not a vegetarian myself, but I don’t eat meat every day, and I have two sisters, one of them vegetarian, the other one vegan – so I’m always looking for inspiring new recipes to try when they come to visit. Those maple sweet potato tacos and mango black bean tacos are so mouth-watering right now! Love all of it!

    So true about how, no matter if we follow another’s recipe to the ‘t’,
