The lemon zest in the ricotta really made this pop! We added a little red chili flake to give it a little spiciness but otherwise followed the recipe exactly. Thank you; this is definitely in the rotation from now on!

Hi Gowri, I'm so glad you love the recipe! I think that would work great. I would assemble it in the same way we do our baked ziti, with a layer of sauce-coated pasta and veggies on the bottom, ricotta dollops in the middle, and more pasta and veggies + mozzarella on top.

This is one of my favorite lasagna recipes. It does take some time to assemble and I’m wondering if instead of using lasagna noodles if I could use a regular pasta like penne or ziti. I understand that won’t be lasagna, but it would be a veggie pasta bake. Do you think that would work?

I considered using aubergine, did you press the extra moisture out before roasting? I haven't tried using one yet but I would think you would creplace the courgette!,

I have always had good results following Love and Lemon's recipes. This recipe however is the exception. Here are my notes for improvement.
1. Do not roast the veggies. The recipe direction to roast for 20-25 minutes is simply not enough time. This leads to veggies like zucchini releasing water when baking. No one wants soupy lasagna! Saute the veggies until they are dry. This should save time.
2. More sauce. like a jar and one-half.
3. Bake covered for at least 1 hour. Remove the cover and sprinkle the cheese on top.

Please consider these changes before you spend scads of time putting this dish together.
