I’m so excited to share this vegan chocolate chip cookie recipe today because I just realized something: for as much as I love to bake cookies, this blog is seriously lacking recipes to show for it. Then, I realized why – the camera can hardly snap a photo before Jack reaches his hand into the frame, and they all disappear. Waiting for me to arrange warm cookies nicely on a plate is not something this guy I’m with usually has the patience for.
But today, we were able to get a few shots of these, and I couldn’t be happier, because these vegan chocolate chip cookies are my new favorite treat!
About these vegan chocolate chip cookies
These vegan cookies are made with coconut oil instead of butter. I like using it because it’s a great healthy non-dairy fat that’s less processed than vegan butter substitutes. While I use a flax “egg” to hold these together, a regular egg will work fine here if you’re not vegan and don’t have flax.
You’ll notice, this vegan chocolate chip cookie recipe yields a small batch. If you are making cookies for your family, you can easily double it. For Jack and me, 12 vegan cookies is the perfect number.

Vegan Chocolate Chip Cookies
- 1 tablespoon ground flaxseeds
- 3 tablespoons warm water
- ½ cup spelt flour
- ½ cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup coconut oil, slightly softened
- ½ cup cane sugar (or regular or brown sugar)
- 1 teaspoon vanilla
- 1-2 tablespoons almond milk
- ¼ cup whole rolled oats
- ½ cup semisweet chocolate chips
- ¼ cup chopped walnuts, optional
- Preheat oven to 350° degrees and line a baking sheet with parchment paper.
- In a large mixing bowl (or the bowl of your stand mixer), combine the flax and water. Stir until combined and let it sit and "gel" for 5 minutes.
- In a medium bowl, sift together the flours, baking soda and salt.
- To the large mixing bowl, add the coconut oil, sugar, and vanilla. Mix with an electric mixer until smooth and well combined.
- Gradually add the dry ingredients, and mix until well incorporated. If the batter is too thick and sticky, add 1 to 2 tablespoons almond milk.
- Stir in the oats, chocolate chips, and walnuts, if using.
- Use a 1 tablespoon measuring spoon to scoop balls of dough onto your cookie sheet. Bake for 8-11 minutes, or until the cookies are lightly browned on the edges.
For a non-vegan version, you can use 1 egg, just skip the flax and water.
Butter can be substituted for coconut oil.
For a richer cookie that flattens out more - increase coconut oil by 2 tablespoons.

You nailed it with the word plump. That’s exactly it! This will be my first experience with spelt flour, crossing my fingers!! And I think I will add the walnuts for sure, was reading that eating a handful of walnuts actually decreases belly fat, which is convenient in particular when eating a cookie.

looks delicious! I agree, I’m all about the small batch cookies because you know they are just gonna get gobbled up in one day no matter how many there are. Can i ask, what is the point of half spelt half AP flour. Does it affect the taste or texture much?
I like to use spelt instead of whole wheat (I think it has a lighter taste but it’s healthier than AP). But I still like to use half AP for overall lightness.

What brand of chocolate chips do you use? I’m dairy-free and have yet to find vegan chocolate chips, even semi-sweet chips contain milkfat or list milk under ingredient allergens.

hey Shea, Its amazing how many different foods you can make look tasty with only using vegan friendly ingredients. when I used to think of vegan food before I saw this the image I had of it wasn’t the best. Now that I see you can make cookies it makes me want some. Really nice blog, I liked it a lot. If you haven’t done vegan brownies yet you should try to make those.

Thank you for posting this recipe! I want to bake these this weekend. It says in the recipe that whole wheat flour can replace the spelt flour… but can the spelt flour or some other flour equally replace the whole wheat flour? Like coconut, almond, tapioca, potato, etc? I’ll look this up.
Hi Naomi, I can’t say for sure without having tried them. Also – those flours you mentioned are very different from spelt/wheat so it’s likely the ratios would not be the same. (ie, I know coconut flour requires a much higher liquid ratio).

I tried these today and they turned out soooo good! My 4 year old (who’s super picky, to say the least) gobbled them up too. I used date sugar instead of cane sugar and whole wheat flour in place of spelt flour, like you suggested. Thanks for your wonderful blog, creative recipes, and delectable photos!!

Tried out this recipe as I can’t eat wheat any longer but Spelt is ok. With that said, holy wowser, these are terrific. I ate the entire recipe in one sitting…I guess I’ll have make it again tonight. 🙂
