Be careful, sometimes brewer's yeast is confused with nutritional yeast. Actually it is the same thing, but it's been toasted and deactivated. If it has a warm nutty buttery smell, then it's what you want. I was somewhat successful toasting it in the oven when I once accidentally bought live brewer's yeast, but while the worst of the bitterness was gone it still didn't have the same rich flavor and smell.

You could try a little ground mustard and/or smoked paprika. Sumach is also good, as is onion and garlic powder. I've used them during Pesach (Jewish Passover) since yeast in any form is forbidden during that week. It's not really the same, but still satisfying.

Hi, nutritional yeast is essential for adding the "cheesy" flavor to this recipe. I don't recommend subbing it out!
