Yes, I’d bet money that it’s the carrots.. They are way sweeter than sweet potatoes or squash in most cases. Also, some of them can have a nasty bitterness. So curious if Kate actually tried carrots her self or just went basted on color/consistency. She wouldn’t be the first. Or maybe I’m wrong.

Hi Linda, you can and I certainly reheat leftovers, but it is best fresh. You could make the sauce days in advance just cook and coat the pasta when you're ready to eat.

Hi Andy, not all brands do! We like the 365 Whole Foods brand, which is egg-free. You can also make this recipe with another pasta shape if you prefer!

Mac and cheese has been my favorite food for 70 years, so rest assured that I know my mac and cheese. I've made boxed instant, and I've made gourmet multiple-cheese variations. This particular recipe is almost impossible for me to tell that it's not the "real thing". A bit less vinegar and a bit more yeast, took it over the top, at least to my taste. But definitely the best I've tried in the years I've been avoiding dairy. I really like that it's not mostly cashews, the potato combo works very well; you can't even tell they're there.
