Wow! This is amazing – the filling alone was worth it. I did store bought cheese and sauce, so I’m a little lame, but I have my two favorites and they worked great with this. I did at chorizo seitan to the enchilada sauce for the top so it mimicked my Abuelita’s beef enchiliadas. Will make again and again.

I did not make the vegan cheese sauce or your enchilada sauce. I did make the rest of your recipe but used shredded vegan cheddar cheese in place of the homemade cheese sauce. I made this dish on Christmas eve for my vegan family and they absolutely loved it!

I agree with you about using those spices for a umami flavor! These are very delicious! I made them on Christmas eve for my vegan son and his family. Everyone said they were very yummy! And they thanked me several times for making them. The only thing I did differently, was I used store-bought shredded vegan cheddar cheese.

These were amazing! Followed the recipe exactly, as well as for your “cheese sauce” and made it with your cilantro (brown) rice. Will definitely make this again and again. I will make for company also.
