					<description><![CDATA[I made this using fresh Roma tomatoes and accidentally roasted the chopped onion, garlic, and carrots on the same sheet pan at 400°F for 40 minutes because I didn&#039;t read the instructions first—oops! It still turned out wonderfully, with a rich, velvety texture that my whole family enjoyed.I typically use blended cottage cheese instead of cream to give it added protein but didn&#039;t have any.  I do think it could have used a bit more basil, though.  Next time, I&#039;ll add extra fresh basil or stir a spoonful of basil pesto into the soup (especially the leftovers) to give it an extra boost of flavor.]]></description>
