I don’t have much of a weakness for fried foods. French fries don’t make me crazy, I never really cared for fried chicken… but whenever we’re on vacation, I find myself ordering little balls of fried stuff everywhere we turn. Cod croquettes in Japan, arancini in Italy, and all kinds mashed veggie fritters (with tangy yogurt sauces) in London. Since we’re currently not on vacation, these are baked, not fried… but I promise they’re so good that you likely won’t even notice. I mash creamy butternut squash with cumin and smoky paprika, mix in some tangy feta, and serve them…

Sesame & Orange Kale Salad

I’m a new believer to the raw kale salad movement. I know, I’m late to this party (especially given my love for kale). But better late than never. It was this salad from Snap Kitchen that convinced me a few weeks ago. Bright, tangy, citrusy… exactly what I’m craving during this part of the winter. I made an asian-inspired version by whisking together a dressing of miso paste, a few squeezes of orange juice and some sesame oil… and added in avocado, and toasted almonds, and pickled red onions. And speaking of late… I’ve gotta cut this short because I’m halfway…

Pasta with Roasted Cauliflower, Feta & Sun Dried Tomatoes

This roasted cauliflower pasta is a simple & healthy vegetarian weeknight dinner. Lemon, basil & sun-dried tomatoes give it irresistible pops of flavor!

This cauliflower pasta was my birthday dinner last week. My sister called while the pasta was cooking, and the message she left said, “I hope you’re out doing something special and not at home photographing your dinner.” Well, what can I say, I was obsessed with my cauliflower mission. Plus, it was a cold and rainy night, and this dinner felt warm and cozy. (Well, ok, it was warm when I reheated it after the photos were done… but still). I’m strange about holidays… I just think celebrations should be random. If I made a list of my favorite life…

Couscous Stuffed Red Peppers

A fresh late-summer dinner. Red peppers are stuffed with a delicious mix of lemony kale, mint, pine nuts, and cilantro. Vegan, gluten free option.

I’m not always good at simple. Looking back at some of recipes I’ve posted recently, I realized that I heavily rely on my Vitamix and my food processor. To me, these things are not a hassle, but “old me”, (in a previous life, I never used to cook), would completely skip over a recipe if it asked me to drag out my food processor. Even if i could find all of the pieces for it, I wasn’t interested in the mess and the cleanup. So the other night, I set out to make something that didn’t require fancy ingredients or any…

Fig & Arugula Wheat Berry Salad

This hearty grain & greens salad makes a healthy side or main in fall or late summer. Packed with fresh veggies & herbs, it can be made vegan & gluten-free!

This is actually the third time I set out to make farro. And for one reason or another, a farro post is still yet to happen. Thanks to my superior pantry labeling system (a million unlabeled bags), I happened to grab these wheat berries instead. Turns out, pre-cooked wheat berries and pre-cooked farro look remarkably similar to each other. Not that it matters… in these salads, any grain will do. The formula is simple: grain + green + nut + chopped fresh herbs + a tangy cheese (optional) + a seasonal special guest. Today’s seasonal guest is figs. But unlike my other…

Fettuccine & Sweet Corn Cream

Fettuccine tossed in almond & corn cream sauce with greens makes a perfect summer dinner. Lighter than a dairy cream sauce but no less delicious. Vegan.

Oh, corn… if you’re not from the midwest, you don’t really know corn… in the same way that if you’ve never been to southern Italy, you’ve never truly experienced a tomato. Jack doesn’t “get” corn. But he’s from Florida, so he never grew up with late-July anticipation of the sweet, crunchy, juicy goodness that is Illinois bi-color corn. (And truthfully, I think the closest he got to “corn” as a child was via Frito-Lay). If I had peak-season Illinois corn, I wouldn’t even be cooking it this much. This is a summery dish you make when you live somewhere that…
