Pavlovas with Lemon Coconut Cream

If you've never had a pavlova for dessert, you're in for a treat! In my recipe, I top vanilla meringue with lemony coconut cream, berries & fresh mint.

For me, there’s such an overlap between cooking and traveling – I just love navigating new recipes as much as I love exploring new places. I’m in my happy place when I’m getting lost, trying new things, and tasting new foods… whether in my kitchen or somewhere around the world. We’ve had a serious case of wanderlust lately. Jack and I have spent a good amount of time in Europe and Asia, but one place that’s been high on our travel list is New Zealand. By an amazing stroke of coincidence, Air New Zealand approached us to partner up for…

Matcha Green Tea Ice Cream

When we go to Japan, our favorite treat is the matcha green tea ice cream. Here's my vegan version, which uses coconut milk in place of dairy.

Jack here, bringing you one of the many joys from our Japan travels – matcha ice cream. We had no idea, before going, that green tea ice cream was even a thing. But the minute you walk down the street in any touristy area, you’re guaranteed to see giant fake green soft-serve cones outside of ice cream shops. Seeing something so American and familiar as a giant fake soft-serve ice cream cone, but *green*, was, well, it made me want to eat some. Fast forward through the trip, and Jeanine and I must have eaten 1 cone each every other day. So enough…

Vegan Spelt Chocolate Chip Cookies

Looking for the BEST vegan chocolate chip cookies? You've found them. Double this recipe to make a bigger batch, and enjoy!

Happy Saturday! I’m so excited to share this vegan chocolate chip cookie recipe today because I just realized something: for as much as I love to bake cookies, this blog is seriously lacking recipes to show for it. Then, I realized why – the camera can hardly snap a photo before Jack reaches his hand into the frame, and they all disappear. Waiting for me to arrange warm cookies nicely on a plate is not something this guy I’m with usually has the patience for. But today, we were able to get a few shots of these, and I couldn’t be happier, because…

Buttercup Squash Crumble Bars

The ultimate fall dessert - these crumbly, creamy butternut squash bars are topped with chocolate and coconut. (Plus a video!!)

I had this buttercup squash (perhaps the funkiest looking squash of them all), sitting on my countertop for the longest time. It likely would have become soup had it not been for the name itself –  “buttercup” which spoke to me and said: let’s make a crumbly & buttery dessert! I won’t go as far to say this is healthy, but hey, it’s the holidays and we’re making dessert, so let’s live a little. These bars are made with good quality organic ingredients (and remember: squash). This recipe is loosely based on my recipe for raspberry crumble bars. I switched out…

Sweet Harvest Pumpkin Ice Cream

Made with just 4 ingredients, this vegan Pumpkin Black Tea Ice Cream recipe is a simple & healthy pumpkin spice treat! Perfect for fall and winter holidays.

Are you all pumpkin-ed out yet? Hopefully not – but even if you are, you just have to try this one. If you’ve been following for long you know I have just a slight love for ice creams made with coconut milk. But this one? This one not only takes the cake but probably the pumpkin and apple pies too. It’s a rich & creamy, yet healthier, take on holiday desserts. I’ve had tea ice cream on my mind ever since tasting a tea-infused sorbet while visiting Celestial Seasonings last month. Their Sweet Harvest Pumpkin Black Tea is warmly spiced with cinnamon, ginger, and nutmeg…

Pistachio Cranberry Cookies

I made a half batch of these cookies, which was clearly a mistake. I ate the last one for breakfast this morning and I could really go for another one right about now. Chewy, oaty, nutty… slightly sweet and warmly spiced… it’s the kind of cookie that’s just healthy enough to get by as breakfast but would be even more perfect as a 2pm snack. If only… This recipe is just slightly adapted from Amy Chaplin’s book At Home in the Whole Food Kitchen, which is hands down one of the most beautiful cookbooks I’ve ever held. I’ve been a fan of Amy’s for the…

How to Make Frozen Yogurt

Learn how to make frozen yogurt with this easy frozen yogurt recipe! Luscious, rich & creamy, it beats soft-serve froyo any day.

We’ve made a lot of ice creams before, so I don’t know why it’s taken us this long to think of making a frozen yogurt recipe with actual yogurt! Guess what? It tastes nothing like the soft-serve froyo you get from frozen yogurt shops. It’s creamy, luscious, and rich, made with Greek yogurt, a bit of coconut cream, a little sugar, maple syrup, and vanilla. The yogurt gives it a tangy flavor (a little like cheesecake), and it has a bright pop from the tart cherries that are marbled throughout. We’re kind of obsessed. How to Make Frozen Yogurt To make this frozen…

Gluten-free Skillet Cookies

A lot of gluten free baking experiments happen around here. If you haven’t noticed them, it’s because a good many of those trials never become post-able recipes. I’ll say it (and I won’t be the first!) – gluten free baking is hard. I know many of you are pros, but for the rest of us, it can be frustrating and not to mention expensive. Today, I’m here to relieve you of all of your internet-flour purchasing by saying: just buy a pre-made flour blend. One bag, and you’re done. For years, all of my gluten free friends have sworn by…

Sweet Curried Almonds

As a food blogger, I use my stove nearly every day without thinking much about it. It’s easy to take things like multiple burners and good ventilation for granted. (Well, except when Jack cooks – we have to frantically open every window to keep the fire department from showing up). In other areas of the world, women are cooking over a small fires in enclosed spaces that lack light and ventilation. Their kitchens are filled with smoke, making it difficult (not to mention unsafe) to prepare meals for their families. This Mother’s Day, Equal Exchange is working to donate energy-efficient…

Almond-ella Spread

Here's a delicious, healthy version of nutella made with almonds. It's vegan, dairy-free, gluten free, and only three ingredients!

Everyone loves nutella right? I love it as much as the next person, but I don’t love all of the unhealthy ingredients that are in it. This almond chocolate spread, (almond-ella is what I’m calling it), is just as creamy and delicious. It’s super easy and just 3 ingredients: almond butter, chocolate, and (the secret to it’s smooth texture), coconut oil. Melt everything together, pour it into a jar. It’ll firm up and set as it cools, (if you can wait that long). Slather it on toasted bread and top it with your favorite fruit. Many of you have asked me to recommend gluten…
