The frittata is one of my favorite things to throw together because, really, anything you need to use up can go into a frittata. This one is made of every vegetable I had on hand last week – a variety of tomatoes, zucchini and some really lovely sweet potato greens. (Although feel free to use spinach or another leafy green – whatever you have).
Awhile back, I used to shy away from frittatas because I thought they required lots of butter and cream. (I used to be entirely non-dairy). While I do eat small amounts of high quality cheese pretty often these days, I don’t do milk. Since almond milk is what I keep on hand, almond milk is what goes into my frittata. It works perfectly to make the eggs nice and fluffy.
You might not be able to find sweet potato greens, but if you see them at your local farmers market – grab them. They’re so soft and delicious – like spinach but with a more mild flavor.
Pile in the veggies and serve this for brunch, or better yet – breakfast for dinner!
There’s only one thing more summery than juicy, ripe peaches: Juicy, ripe peaches frozen into sweet, melty, almond milk popsicles! It’s summer on a stick, friends.
First, you need to get your hands on some really good peaches. If you can’t find good peaches, use whatever juicy peak-season fruit you do have. (Sliced strawberries would be excellent here).
For the base, whisk Vanilla Almond Breeze, with a touch of coconut oil and maple syrup. You could also use plain (sweetened) almond milk and add a bit of vanilla bean. (I’d stay away from vanilla extract this time).
These are pretty lightly sweetened, which is my personal preference. Feel free to add more maple syrup if you wish. Or get fancy and simmer your peaches into a peach purée.
Because its summer, and I was lazy, I kept it simple…
Fill a popsicle mold with chopped peaches and pour the almond milk mixture over top. Don’t worry, if you don’t have a popsicle mold, you can use little cups instead. Just let them freeze for an hour or so before placing the sticks.
Now the hard part: waiting. Let them freeze overnight (or about 10 hours).
Try to take the photo quickly before they melt all over your countertop!

It might not be summer everywhere yet, but here in Texas, it’s hot. Lately our weekend afternoons have consisted of long sweaty walks followed by sweet frozen treats.
This ice cream has been our treat-of-choice over the past few weeks – mainly because when you experiment with new recipes, you make a lot of versions. And thus, a lot of ice cream. It’s not a bad problem to have.
This recipe is a 2-parter, you can stop at the ice cream, or go a step further and make it into a milkshake. Instead of our regular coconut base, we did a nutty version using raw cashews, peanut butter and Almond Breeze. The bourbon adds a nice rich flavor that doesn’t actually taste boozy (although you could add more bourbon to your milkshake if you want). If alcohol isn’t your thing, we found that a bit of apple cider vinegar created a similar balanced flavor.
This one is a little equipment heavy, as you need a vitamix-type-blender and also an ice cream maker. (I have to be honest, I’m not into extra gadgets but we get tons of use out of both of these items). And while this recipe might not be light on the calories, it is light on the number of ingredients. So if you have all of the above, this will be a snap to make and a fun summer treat!
We have a carrot cake tradition around here. My mom makes one for Jack whenever she comes to visit, and I make one for Jack every year for his birthday. I don’t know when the “Jeanine gets cake” tradition will ever start, but I can’t complain because, really, we both get cake and we eat it too.
This year, I took some liberties with my mom’s recipe and made a fully vegan version – frosting and all. Instead of cream cheese (or tofu cream cheese), I made a cream cheese-like frosting using macadamia nuts, cashews, lemon and Almond Breeze. And instead of powdered sugar, the frosting is sweetened with maple syrup.
I recommend making this frosting in a super high speed blender in order to get it really creamy. If you don’t have one, you could always make coconut whip or cream cheese frosting using a regular mixer. Or if frosting is too fussy for you, this cake is super delicious on it’s own!
I’m having a hard time looking at this recipe and not talking about the weather. I realize… weather not a crowd-pleasing topic, but I just can’t get over the gorgeous-ness that is happening outside of my window. (If you’re a fellow midwestern transplant, you understand my excitement). I also can’t get over these bright little tartines.
Oh, and this sauce. It’s along the same lines as some of the cashew-based sauces I’ve made, but it’s also somehow entirely different. The almonds and almond milk create a light, creamy homemade mayo-ish texture. The mustard gives it tang (don’t be shy with the mustard). I added turmeric, initially just for color, but I think it’s the secret ingredient that really makes this special.
This is entirely vegan except for the eggs that I put on my toasts… obviously, those are optional.
