Favorite Vegetarian Thanksgiving Recipes

My favorite vegetarian Thanksgiving recipes - sides, salads, mashed potatoes, stuffing, main dishes, and dessert. Vegan and gluten-free options.

Does anyone else feel like Thanksgiving is SO early this year?! Five minutes ago it was summer, then the leaves were falling, then we had a bit of snow last week(!), so needless to say, it’s suddenly holiday season! Whether you’re hosting the big meal or you’ve been assigned to bring a salad or side dish, here are a few recipe ideas. This is a short list of recipes that are my favorites right now. There are also tons more listed under the Thanksgiving tab of our recipe index. Start the meal off with this Butternut Squash Hummus. In my…

Vegetarian Thanksgiving Sides

Vegetarian Thanksgiving Side dishes! Vegan and gluten free options too.

It’s Thanksgiving week! I think we’re up to 17 people that are coming over on Thursday, so, um, yikes! Thankfully, everyone is bringing something so the cooking won’t be so difficult. Like always, I’ll be making the salad and a vegetable side dish or two. In case you’re like me – still deciding what to make – here are some of my favorite vegetarian starters and side dishes! Click on the images to go directly to each recipe! Harvest Haven Salad A gorgeous seasonal salad that’s a great light way to start off the meal. Simple Roasted Beets with Citrus…

Butternut Squash & Leek Stuffing

A colorful stuffing for your Thanksgiving dinner! This veggie-ful stuffing is made with fall butternut squash, leeks, celery, sage, and cranberries. Vegan.

My favorite part about Thanksgiving food – the stuffing! Why soggy-baked bread tastes so good, I have no idea, but it just does. Maybe it’s because we only eat it once a year (or in my case 5 times this year after testing this recipe and consuming the leftovers), but there’s something about that combo of celery, sage, bread, and broth that’s SO tasty. But here’s the truth – I often shy away from making stuffing for the blog because, well, have you ever google-image searched “stuffing”? If there’s an award for “ugliest holiday dish,” it goes to stuffing. Maybe…

Parsnip Puree

This parsnip puree is like the fluffiest mashed potatoes you can imagine. Thanks to the parsnips and roasted garlic, it's rich, nutty, and delicious.

This year, this parsnip puree is taking the place of the mashed potatoes at our Thanksgiving dinner. You might be thinking, “What?! That’s crazy!” You’re not alone. That’s what Jack thought too. He’s a big mashed potato purist. Last year’s cauliflower mashed potatoes were a stretch for him, so parsnip puree sans potatoes seemed pretty nuts. Well, good news! Both of us couldn’t stop eating the puree by the spoonful before it made it to the table. It’s rich and nutty, with an amazing light and fluffy texture. Mashed-potato-purist approved! Jack loved this recipe, and I think you will too.…

Roasted Delicata Squash with Apples

This roasted delicata squash recipe is the ultimate fall side! Creamy squash pairs with onions, apples & herbs to make an aromatic, sweet & tangy dish.

If you’ve never roasted delicata squash, get ready to fall in love! When winter squash starts popping up at farmers markets and in grocery stores each year, I’m excited to get my hands on any of it – acorn squash, butternut, sugar pie pumpkins, and more. But out of all of them, delicata is my favorite squash by far. For one, it’s easy to work with. You can actually eat the skin, so there’s no need to peel it! In fact, the contrast of the creamy flesh with the lightly chewy skin is so good that I think it’s better…

Vegetarian Thanksgiving Sides

Thanksgiving is next week! I can hardly believe it, every year it seems to come around quicker and quicker. Here on the blog, I usually post a full menu of non-turkey day options as if I’m going to be cooking up the big holiday meal myself. In reality, Jack and I will be going to someone else’s house and I’ll likely bring the salad. So this year I thought I’d cut to the chase and post some of my favorite Thanksgiving side dishes. Because let’s be real, the sides are really the star of the show anyway. pictured above: Vegan Cauliflower Mashed Potatoes Simple Lemon Green Beans / Kale & Shiitake…

Quinoa Salad Stuffed Acorn Squash

Quinoa Salad Stuffed Acorn Squash is a healthy vegetarian Thanksgiving main dish.

Ok, so if you really know your vegetables, you’ll notice that those guys in front are actually Jester Squash and not Acorn Squash. Technicalities aside, they work just as well for roasting and stuffing. Something I really love about my local Farmhouse Delivery is that vegetable varieties show up that even I – the girl that literally wrote a book about vegetables – have to occasionally Google. This recipe is comfort food on the lighter side. Sometimes fall foods make me feel just so darn full, so what I did to avoid a near-food coma situation was stuff the squashes with a light & bright quinoa salad. Serve…

Balsamic Brussels Sprouts Salad

Maple balsamic Brussels sprouts are irresistibly sweet & tangy in this hearty side, and caramelized roasted onions add delicious depth of flavor.

Let the Thanksgiving countdown begin! This year we’re starting with the vegetable that everyone used to hate that everyone now loves – Brussels sprouts! This recipe is a spin on one of our first-ever blog posts. In that recipe, I roasted the sprouts with a combo of balsamic vinegar and maple syrup. As a result, they become nicely sweet and caramelized and have a great tang from the balsamic vinegar. This recipe is identical, except I roasted onions along with the Brussels sprouts and mixed them with nutty farro to make this a more substantial dish. So, I made these roasted…
