Does anyone else feel like Thanksgiving is SO early this year?! Five minutes ago it was summer, then the leaves were falling, then we had a bit of snow last week(!), so needless to say, it’s suddenly holiday season! My favorite part about Thanksgiving food – the stuffing! Why soggy-baked bread tastes so good, I have no idea, but it just does. This year, this parsnip puree is taking the place of the mashed potatoes at our Thanksgiving dinner. You might be thinking, “What?! That’s crazy!” You’re not alone. That’s what Jack thought too. He’s a big mashed potato purist. Last year’s cauliflower mashed potatoes were a stretch for him, so parsnip puree sans potatoes seemed pretty nuts. Well, good news! Ok, so if you really know your vegetables, you’ll notice that those guys in front are actually Jester Squash and not Acorn Squash. This recipe is a spin on one of our first-ever blog posts. In that recipe, I roasted the sprouts with a combo of balsamic vinegar and maple syrup.
