I would say try anything once. You may just find a keeper through experimentation. I may try making it without the Rocket in the salad and serve the salad over the rocket just in case it doesn't make the flavor your palate enjoys. The parsley and coriander add a specific regional flavor profile that is hard to replace. I often add chopped kale as a filler and for the fiber boost, but it has a fairly neutral flavor whereas the rocket is quite peppery. Be adventurous.

You soak the bulgur, just like she did. You do use a 7-spice blend, of which cinnamon, clove, coriander, and pepper is used, so the the cinnamon is not so different. Other countries make this dish as well, also, the dish has evolved. Maybe stop being such a cow.

As a Lebanese, I can confirm that this recipe is so wrong. No garlic, coriander, cucumber or cinnamon should be ever added to a tabouleh. Also, we use raw bulgur, not cooked. Finally we use white or brown onion, not scalions... stop scamming my friends.
