Just made this dish. I was on the phone with a friend and screamed when I took the first bite. So darn good. She was apprehensive about my joy when I mentioned the cabbage slaw but I told her it surely made all the flavors kinda burst in my mouth. This dish is almost sinful comfort food but it’s healthy vegan so it’s just good comfort food. I made a couple of adjustments by adding a can of tomato sauce to better absorb the bag of Beyond Meat Beefy Crumbles, 3 cups of organic frozen mixed vegetables instead of 1 cup of corn, and tablespoon of agave that I added. I can’t wait to share this meal with someone(s). Thanks soooo much. I’m a vegan newbie and this website is my lifesaver.

I haven’t tried a new chili recipe in years, as I have 2 that I love. But this caught my eye, and I followed your recipe and it was so amazing! I did add some ground beef, and didn’t make the slaw (though I had planned to!). Seriously, delish – so much flavor. Loved the sweet hot of the adobo sauce.

Hi John, I’ve never used an air fryer so I’m not sure. They’re very easy to bake/roast in the oven.
