The other day, I professed my love of midwest sweet corn and as a result, I got a ton requests for more ways to use corn while it’s in peak season. To be honest, when corn is at its best like it is right now, not much has to be done to it… I usually just grill it with a little olive oil and a few pinches of salt or toss the raw kernels into salads. But here are some of my favorite corn recipes that go a bit further and are so perfect if you’re up to your ears in corn this summer!

This is one of my all-time favorite recipes – it’s basically an explosion of everything that’s in season right now (peaches, peppers, cucumber, basil, etc), and drizzled with creamy cilantro dressing. If you make one recipe before summer is over – make it this one 🙂

Another reader favorite – this chowder is thick, satisfying, and perfect for cooler summer nights. It contains 4 ears of sweet corn, potato for thickness, smoked paprika for, well, smokiness. It’s finished with a bit of coconut milk in lieu of cream.

This recipe uses a trifecta of corn – there’s creamy corn hummus, slathered on crispy corn tortillas, with more corn (and other things – avocado, jalapeno) piled on top.

  1. You’re killing me. We didn’t get to go to the U.S. this summer and there is no good sweet corn in France. Not like Midwestern sweet corn, bought from a truck or picked out of a relative’s garden. When we are there, we eat it every. single. day.

    • Aww! So sorry you’re missing the corn this year :). We’re going to France next month, so excited!

    I found some recipes I just have to try. Even the salad with avocado, a fruit my husband doesn’t like. Or thinks he doesn’t like (what I know he doesn’t like is guacamole, and I’m pretty much with him on that). Thanks for a great collection of corn recipes.

    • My husband is the same – doesn’t like guac, but then he ends up liking avocado in recipes otherwise 🙂

    I love all your corn recipes. I also have one for you… “Corn Saute’…….saute corn, green onions and ginger….. then finish with chopped mint, cilantro, lime and a tab of butter! YUM!

    Love your cookbook… that’s how I found your blog. Doesn’t it usually work the other way around??!!

    Love your elote salad idea. I use corn to make black bean and corn salsa with peppers/onions/avocado. I like to use sweet corn in fillings for burritos/tacos/quesadillas with any combo of kale, sweet potatoes, black beans, green beans, peppers, onions. I put it in cornbread and since it goes so well with beans, it is almost always in my chile. It marries well with tomatoes and squashes also, so you can use it in tomato pies and 3 sisters stews,
