Rolled oats soaked overnight in milk was my favorite until I tried this. Steel cut oats are SO worth the extra effort! The only differences in my process is, I use 4 cups of water for every cup of oats, and I bring the water to a boil with the oats in it--this makes it creamier, so I hardly have to add milk.

Very pleased with the finished dish. I was a bit impatient to wait for the oats to absorb the remaining liquid, so I strained off excess liquid for two servings. Had I waited I noticed the remaining oats in the saucepan, absorbed the liquid as it sat & slightly cooled. Glad the recipe made enough for leftovers so I can cook once & eat twice!

Hi Peter, thanks for your note! The 3.5 cups liquid in the blog post is referring to the milk and water combined. Sorry for the confusion!

I haven't made this yet. I just wanted to point out a potential typo. In the section on how to cook steel cut oats you say to combine 1 cup of oats with 3 1/2 c water, but in the recipe you say to use 2 1/2c water. I assume 2 1/2 c is the correct amount.
