Followed the recipe, but dough was very difficult to handle. Rolled pretzels kept shrinking. It just doesn’t work.

I made this recipe again with just 1 little tweak. I brushed on a little beaten egg & water mixture before sprinkling on the coarse salt. I wish there was an option to send you a picture of them. They are too beautiful to eat!
My husband & I like them a bit bigger, so I divided the dough into 6 pieces instead of 8. Thank you for the step by step guided pics on how to shape them! This is the 3rd time I made them, and I didn’t need the help so much.

In reply to Kelli. Hi Kelli, you can just score the dough on the bottom curve of the pretzel with a knife to help vent steam. It doesn't have to be very deep.

These were fantastic! Perfect pretzels! Soft and doughy on the inside, perfectly crisp on the outside and the flavor was spot on. The poaching step is genius. 100% will make again.
