This recipe is delicious! Served the roasted rainbow carrots at Christmas dinner and everyone loved them; the Dijon maple sauce delicious.

so easy and so incredibly good! I will definitely make again all her accompaniment such as the gremolata and tahini sauce were superb with this dish. One thing to keep your carrots, uniform in size for even roasting. . This will be a family favor and a great favor for when I entering.

With the gremolata I did not have pomegranate or cumin seed so instead, I used to fennel seeds, which I thought was also delicious . .
