I love roasted golden beets with basalmic vinegar dressing & goat cheese. Also like to pickle roasted beets in a vinegar, sesame oil, honey, & red pepper flakes marinade. Delish!

Great recipe! I left the skins on because there’s so many nutrients in them and it came out wonderfully.

Just finished making this recipe, followed the roasting instructions to a tee and it was outstanding. Drizzled champagne vinaigrette dressing over the beets once prepared along with unsalted walnuts, cranberries, and goat cheese. Delicious!

Hi Gloria, I wouldn’t roast the beets whole without foil—I think they would be drier and take longer to cook. You could chop them though—check out our roasted root vegetables post for timing: https://www.loveandlemons.com/roasted-root-vegetables/. If you like, you can peel them before roasting. That’s just personal preference!

Just wondering, what is the reason to leave the skin on? Does it taste better or for ease? Also, does roasting without foil make it more caramelized? Thank you!
