I am only a stepmother, to my husband’s long since grown children. My husband will be cooking for mother’s day, and since he is just now planning his meals for the week, what I get will be a surprise. 🙂 Since I have never been a mother and my mother hated mother’s day as a holiday, I pretty much have never celebrated it.

I will make a Roasted Vegetable Lasagna made with béchamel sauce, instead of tomato sauce. This is one of her favorites!
Lemon sponge cake with fresh strawberries and cream, vegetable enchiladas with asparagus, tomatillos, corn, green onions, cheese, and spices, and rice snd beans.
I mom is on the other side of the country, but I will be making one of her favorites in her honor – eggs with asparagus, and a strawberry rhubarb pie, just like she used to make!
Celebrating Mother’s Day at my nephews new house. I’m bringing Lemon Cake and Beet Salad with goat cheese.
I plan to make Soupe au pistou from the Joy of Cooking cookbook. It’s been one of my favorite summer recipes for years!
I would like to go to brunch for Mother’s Day, and have quiche (no bacon) and fruit salad. Maybe a mimosa:)

Every Mother’s day, my husband makes me 2 different kinds of wheat-free scones. He makes enough so that I can freeze several and enjoy them for weeks after. I can’t wait for Mother’s Day!
wish i lived closer to my mom so i could make her a wonderful mother’s day dinner. i’m thinking anything with fresh asparagus she would love!

How to choose?!?!?! I made the mango salsa last night to serve with grilled tuna. It was SO beautiful and SO good. May have to do it again next week for Mother’s Day.
