Your roasted vegetable lasagna looks delicious! I would love that made with gluten free noodles and a lovely salad with a tart Italian dressing to offset the lasagna. For dessert a bowl of fresh strawberries! It couldn’t get any better!

Sadly, I’m 9 hours by car away from my mom, and I’m hoping my first born will take me out for Mother’s Day. However, I will be making raspberry crumble bars (a GF, non-walnut version) for my mom friends at our May 9th craft night (or the spinach artichoke pizza if the group ends up at my house).
I’m going to try making cheesecake in my instant pot! I hope someone else is cooking dinner though 🙂
