    May 12th is also the day I’m graduating from college. I couldn’t have done it without support from my mom, so it’s an appropriate day to offer her my thanks in some small way. Scallops are her favorite, and I’m thinking about trying one of the new basque cheesecakes for dessert.

    I’m a single mom and a nurse who works on Mother’s Day this year. My sweet 13 year old daughter, Sydney, is making me some of my favorites. Quiche, roasted asparagus, spring mixed salad and chocolate dipped strawberries. Hope every Mom is blessed this Mother’s Day! ?

    For Mother’s Day I’ll be making galettes, some with comte’ cheese and egg in the center and others with fresh berries and cream. These are lovely crepes made with buckwheat flour, paper thin and yummy. I’m hoping to win your kind cookware offer.

    My family loves French Toast Bread Pudding so I will make that for Mother”s Day…the orange zest makes it extra yummy! Unfortunately, I lost my mom 3 years ago. She was the best mom ever and I miss her every day. I will probably make Ambrosia Salad in her honor as it was a favorite and reminds me of home and our family gatherings.

    My Grandmother called them Russian Pancakes,( or French crepes). they are kind of a thin milk and egg pancake with assorted berries down the middle and rolled up, dollop with homemade cinnamon whipped cream. Maple bacon and poached eggs go nicely with this breakfast. My grown kids love this.     I really wish that I could be pampered on Mother’s Day but since I’m the only one here maybe I’ll pamper myself with lemon crepes with ricotta and blueberries, my favorite brunch. Or I’ll crawl in bed and pull the covers over my head. One or the other. *shrugs*

    For Mother’s day I’m making my mom orange zest madeleines dipped in dark chocolate. Typical eggs, turkey bacon, and hashbrowns for breakfast. And finally, mojitos made with fresh mint I grow in my garden.
