They needed at least 10 more minutes before the toothpick came out clean and sank in the middle. The texture was rubbery. With so little sweetness, they lacked flavor. I have never had trouble with muffins before -- they are usually pretty foolproof. I followed the recipe exactly! Not sure what went wrong, but, bummer.]]></description>

I used avocado oil, and I made them gluten-free with one cup of oat flour, and 3/4 cup of Bob’s red mill gluten-free flour.. We like our pumpkin spice extra spicy so I also added extra ginger, clove, and cinnamon with a couple more tablespoons of sugar. They’re an absolute favorite and frequently brought to school for a healthier snack.]]></description>

I liked the texture well enough, and I did make two substitutions (Irish butter instead of oil, local honey instead of maple syrup), so I gave a 3/5. I added in golden raisins (~1/3 cup) and walnuts (~1/2 cup), and thank goodness I did, because the raisins added much needed flavor. If I were to make these again (although I likely will not), I think I would leave the milk out altogether, up the liquid sweetener to a half cup, and put in a whole can of pumpkin purée instead of a cup. I would also double the spices, as the strongest flavor in my muffins wasn&#039;t pumpkin or spice, but baking soda. That said, I am still grateful for this site and this recipe, even if it wasn&#039;t a ht for me.]]></description>
