This soup is delicious. I made the leek stock–fantastic! I added a few bay leaves and some bird’s eye chilis for a little zing. What a great way to use all the leek parts!

Love this recipe! First time making potato leek soup. So comforting. I ended up using 2 cups of vegetable broth and 4 cups of chicken broth because it’s all we had, but it still turned out great. Thanks for the quick and yummy recipe.

It’s a family favorite and so nutritious! No cream or butter. It had added protein from the addition of white beans. It’s more like a chowder than a soup. Do you still have it posted somewhere?

Made this tonight, so deliciois. Didn’t have thyme used fresh parsley and blended it all. Also added cooked crumbled sausage at the end with the cream and fresh lemon . It was a hit with the family!

Super good! Creamy with alot of flavour! I used coconut milk instead and it worked perfectly and I just scrubbed and chopped the potatoes instead of peeling them and that give it a nice texture! Will make again! Cheers x
