This is the end of Palisade peach season in Colorado, the best peaches in the country (sorry, GA and SC). I made this recipe earlier and my husband and I both loved it. Today, me daughter is here to make peach jam and salsa with me. Yummy!

In reply to Shaboozie. Canning salsa in jars sounds like a good idea but doesn’t turn out very well. To safely can it you have to process it at high heat which really affects the texture in not a good way.

Or OR as cilantro hater, you learn for yourself good substitutes in the various cuisines that use it a lot, and you post kinder comments by saying something like, “I have the genetic mutation that makes me taste-sensitive to the aldehydes in cilantro, so for this recipe I used ____ instead and it was delicious.” You would be helping others like you and me, and also less of a drama bro for the L&L team to deal with. Just a thought. (I give the thumbs-up to the mint suggestion.)

In reply to Brian. Interesting enough, cilantro does not taste like soap to everyone. It has to do with an enzyme. Cilantro is delicious to me and has never taste like soap. I know for some it does and omitting it from recipes is understandable.
