I have made this recipe several times and it never ever disappoints. Some variations I have done are to use diced pancetta when I do not have sausage on hand. I have included roasted chickpeas coated with smoked paprika for an additional flavor profile. Deeply caramelized onions elevate the taste so much that they are essential in my opinion and have prompted me to use them in other recipes as well. Thank you for a terrific recipe.

Loved it! My husband said it was really good and he doesn’t usually comment. I didn’t have the sausage so I substituted roasted chick peas, otherwise I followed the recipe. I will definitely make this again.

Another recipe in which weights would be so handy – the recipe calls for 1.5 bunches of broccoli rabe. I bought one bunch that weighs 340 grams – will see how it goes!
