I wonder if preparing the mushrooms similar to duxelles would create more of a ground taco meat texture. Thank you, as a liker of meat, but a lover of vegetables, I appreciate these recipes so much. People dont need meat in everything they eat. They just need great recipes like yours to show whats possible!

Wow! Found this recipe and I could not be more delighted! My vegan daughter and my vegetarian son in law and even my omnivore husband loved them! The avacoda salsa knocked it out of the park. I made a few vegan aioli choices to serve on the side. Thank You so much!

I made these tacos exactly as instructed, and the quality was gourmet. I felt like I was eating at a fancy restaurant, except that the tacos were pretty effortless. I also went the extra step and made the pickled onions. Super easy (can’t believe I used to but these at the grocery store!). Don’t skip the adobo sauce and the pickled onions. They make a big difference.
