I don’t usually eat mushroom! My daughter had her wisdom teeth extracted and wanted mushroom soup. As I searched online, this recipe and ratings drew me. Without even tasting it – I made it. Couldn’t follow strictly but had most ingredients and asked ChatGPT for substitutes! ( didn’t have that much button mushroom, so added some cauliflower; didn’t have tamari sauce, so added aminos; didn’t have enough broth, so added some miso..) My daughter said it tastes like an extremely high end restaurant soup!!!! That’s really something!!!

I used vegetable broth the first time I made it and it was really good. However, the second time around, I lacked vegetable broth so I used homemade chicken stock and let me tell you, it was damn delicious. Just letting you know that there’s another liquid option that gives it a whole new flavor.

Fabulous recipe! I used a mushroom combo from a local mushroom farm ( Primordial ) The thyme and white wine addition was so spot on! I appreciate no cream, as I’m lactose intolerant, but also because there’s no need for it. Thanks for another great recipe!
