Mother’s Day is this weekend! That sure came up quick! In case you need some recipe inspiration, here are a few of my favorites that I think would be perfect for the occasion. Plus, see below for an extra special giveaway 🙂
For brunch:
I love these lightly sweet Coconut Mango Muffins. I often keep them in my freezer for a weekday breakfast or snack. To make them brunch-able, serve with the mini frittatas below:
These little Mini Tomato Frittatas with Dill are as cute as they are delicious. I absolutely love the combo of dill and eggs. These little guys are also filled with kale, feta, scallions, and tomatoes.
This Blueberry Coconut Baked Oatmeal might be my favorite brunch recipe ever. It’s a sweet breakfast that’s filled with so many good-for-you things like oats, almonds, hemp seeds, coconut flakes, strawberries, and bananas.
This Shakshuka with Spinach and Harissa is a reader favorite and one of my favorites too. I just love these baked eggs in spicy tomato sauce. Serve with avocado slices and toast for dipping – yum yum!
This one just makes me drool. The Cinnamon Sugar Baked French Toast is a slightly more indulgent sweet breakfast than the baked oatmeal above and it’s a crowd pleaser, because who doesn’t love french toast! I originally made this using pomegranates in the winter, but now that it’s spring, I would use fresh berries instead.
Farmers Market Inspired Recipes:
This Fennel & Clementine Chopped Salad is so pretty! It’s a crunchy slaw-like salad that’s tossed with a ginger-miso dressing and topped with clementines, avocado, and fresh mint.
Chickpea Salad Wraps with Avocado Dill Sauce. If you love tuna salad, but not actual tuna, give these chickpea salad wraps a go! I love to eat these for lunch, but they’d also be a great springy brunch appetizer.
I’ve never actually had pizza on Mother’s Day, but this super springy Farmers Market Asparagus Potato Pizza is so elegant and fresh with those pretty asparagus ribbons that I’m sure it would be a big hit.
Dinner for a group:
You can’t go wrong with a big pan of lasagna and this Roasted Vegetable Lasagna will please vegetarians and meat-eaters alike!
For Dessert:
This Strawberry Coconut Cream Tart has a delectable almond flour crust. This is a lightly sweet, very fresh, grain-free dessert that everyone’s going to love.

My favorite dinner is breakfast for dinner, so choosing a favorite brunch food is pretty tough. My favorite sweet brunch is Liege waffles with fresh berries; no syrup needed! My newly discovered favorite savory brunch is a veggie-topped Dutch Baby.
I would like brunch all day, every day! It’s hard to pick just one brunch food but I guess it would have to be a delicious eggs Benedict! Yummm

I am obsessed with scones – traditional British scones with jam and cream, vegan blueberry and rosemary scones, toffee chocolate chip scones! They are perfect with a fresh cup of coffee and bring so much joy to my mornings!

Brunch is not brunch without hash brown potatoes cooked prepared with rosemary.
Wow! Talk about a tough decision!! I’m going to say corned beef hash with poached eggs and toasted sour dough bread is a favorite of mine as well as a nice stack of buttermilk blueberry pancakes for the sweet tooth in all of us!! 😊😊😊
I love waffles and hardly ever eat them even when I make them for the kids. I also love a really good omelet with hash browns.

Lobster eggs Benedict!
Poached egg on sourdough toast with avocado sprinkled with lemon and olive oil.
Anything my husband makes. (jk, sort of…) I crush your Gluten-free Blueberry Banana Muffins!
I love egg bakes with all sorts of nummy veggies in them, gluten free pancakes and fresh strawberries and blueberries with whipped cream – don’t forget the memosas! 🙂
It’s a toss up between a Dutch baby (savory or sweet!) and eggs benedict, especially with a crab cake. Nom nom nom.
Yum! I always have a hard time picking between sweet & savory when it comes to brunch, so I’d have to say an omelette & some kind of pastry with excellent coffee. 🙂
Breakfast is my absolute favorite meal to prepare, and a hearty kale and sausage quiche with a salad of citrus fruits with mint and a little honey are awesome!

My go-to is an omelette with sauteed red onion, mushrooms, spinach, sliced kalamata olives and a sprinkle of feta on top. On the side…. avocado toast.
Any form of breakfast burrito or taco – endless combinations so it never gets boring. Yum!

Now that is a tough question! First of all, excellent coffee. Then eggs or poached salmon and some good homemade bread.
I love savory quiches with good Gruyere, mushrooms, spinach and green onions. Also a good hot sauce to go on top of the finished dish!
Living in the South, my favorite is a Chicken, Egg, and Bacon Biscuit but for Mother’s Day the tradition in our family is Croque Madame! Also looove the Strawberry Cacao Nib Waffles! Always a go to! Or blackberry muffins using blackberries from the garden! Too hard to choose just one!
A good veggie omelet with fresh salad and yummy coffee-cake muffin!
I love French toast with fresh berries but I also crave a good casserole with bacon, hash browns and lots of cheese!

I love a good poached egg! Especially with lots of veggie toppings! Couple that with a hibiscus mimosa and I am in heaven!!! <3
French toast is one of my favorite items for brunch.

My favorite? Franch toast casserole in the slow cooker. Make the night before. It’s ready when you wake up and you can eat and relax!

I love Eggs Benedict, but with Salmon instead of the ham.
If we are talking decadent, pamper myself, once or twice a year breakfast/brunch its got to be pastries – lemon poppy seed scones with fresh blueberry jam or pumkin cream cheese muffins with walnuts, or almond crescents, or Belgium waffles covered in strawberries and whipped cream. Who can decide? Can I have it all? After all it’s something I do only once or twice a year. I do know that it MUST come with a cup of hot chocolate – preferably white with raspberries floating in it.
Anything with eggs for me!

My favorite brunch recipe is savory french toast:) which is basically bread dipped into an egg and milk mixture with some salt and pepper, pan fried.
I also really like an omelet poured on top stir fried tomatoes and onions. Adding sour cream to the omelet mixture makes it very fluffy especially if the lid is left on while cooking.
My favorite brunch food is so simple – a nice fruit salad makes me very happy!
Favorite brunch food… probably Potato & Cheddar Waffles, with a dollop of sour cream and chives! Yum!
Favorite brunch food specifically for my mother would be smoked salmon with an egg benedict and a slice of toasted bread from a good bakery
I love a toasted Everything bagel with a schmear of whipped cream cheese, strips of lox, thin slices of red onion, a spoonful of capers, and freshly cracked black pepper on top. Oh, and of course, a spicy Bloody Mary to go with it! 😉

Oh my, so hard to pick just one. Smoked salmon Benedict, pot roast Benedict with caramelized onions, chicken and waffles, or stuffed cherry and cream cheese French toast 😏🙏

My all-time favorite brunch recipe is one that my mom has made since I was a kid – Chile Puffed Eggs. A cheesy gooey egg casserole just exploding with flavor, and not at all spicy so even kids love it! I haven’t made it in ages, but now that it’s on my mind, I think that’s what we’ll be having on Sunday! 🙂
For savory, a toss-up between shakshuka and veggie eggs benedict with a mustard hollandaise. For sweet brunch, crepes every time.
Definitely an omelet made with all kinds of delicious veggies and topped with salsa and avocado. It doesn’t get much better than that.

Holy moly what a fab giveaway! The best brunch I ever had was at a local brewery! I had chocolate chip waffles and I also ordered myself a flight of beers. Believe it or not but I am 37 and that was my first experience with beer. I ordered fruity ones and actually enjoyed them. Those waffles tho were absolute perfect. I was recently a very happy mama with a lavender+honey biscuit topped with housemade fruit compote. Oh MYYYYYYYY! And an obvious must=good coffee

Love my Mom’s special brunch casserole with wild rice, sausage, and mushrooms. I make a vegan version with plant based sausage. Mom’s casserole is the center piece of every special occasion. It’s absolutely scrumptious!

My favorite brunch item is homemade whole wheat cinnamon rolls made from freshly milled whole wheat with a cup of coffee.

Hard to choose, but I love a good veggie skillet…. crispy hash browns, fresh grilled veggies, and topped with an over easy egg! (and some hot sauce, of course). My favorite brunch drink is definitely a mimosa!
My favorite brunch recipe is definitely a tofu scramble paired with avocado toast! I love making that for a get together, too! It is so easy to throw in whatever seasonal vegetables you have on hand and everyone can take as little or as much as they want!

I never get tired of a crustless zucchini quiche I made with my son when he was younger. I let him put some dried basil in the mix and he heavy handed it about 3 times the amount the recipe called for. It came out delicious and I’ve made it the same way ever since!!

I don’t think there’s a brunch dish I don’t like…it’s difficult to go out for brunch because of all of the options.
If I’m dining out, I pick things I usually don’t make at home, like eggs benedict.
At home, my favorite is probably homemade muffins or scones, with a pot of Assam tea. But quiches are a close second place.
Eggs Benedict, all day. I’ve had one with prosciutto, arugula and a balsamic glaze that was one of my faves

Red Flannel Hash! Smashed potatoes and roasted beets with horseradish sauce, along with fried eggs and a carrot/arugula salad with lemon mint dressing.
My absolute fav brunch food is breakfast burritos with beans, greens, feta and eggs
Call me old-fashioned, but I love the brunch casserole. This could be strata, a french toast bake, or a pan of jammy, fruity baked oatmeal. Something about that slow bake in the oven is the embodiment of weekend luxury. We have no where to be so we can take our time in the kitchen; something that you never see on a weekday.
A cheddar omelette is my favorite.
I love a good breakfast burrito for brunch. The best one I’ve had yet was at the Fat Cat in Chicago!

I love brunch!! Anything with eggs is always good. But I think the classic fluffy pancakes with blueberries are always a hit!
My favorite brunch food is pancakes!!! I love them with lots of fresh berries placed in the batter after going on the griddle. That way I can load each one up. Lots of real maple syrup, and butter.
One of my other favorites is poached eggs on toast with fresh avocado and a small green vegetable salad with balsamic vinegrette. Yum!

I love making jams and marmalade! My favorite brunch item is toasted ciabatta with tangerine/vanilla bean/cinnamon stick marmalade. (Paired with good coffee, great company, and a sweet dog resting at our feet.) 💕🍋
I love fried polenta with maple syrup topped with lots of fresh blueberries and strawberries!
It’s delicious as a base for ratatouille with a little cheese on top.

A few weeks past my parents held a wine tasting brunch at their place for friends and I. As always, my mum cooked (and cooked, and cooked) lots of delicious things to munch on.
She made a fantastic mushroom-feta-spinach frittata and (though I don’t partake) her classic pecan topped sticky buns.
This year for mothers day we’re making brunch Crepes with buckwheat purchased in Québec at a beautiful little creperie. Egg, cheese, and sweet ones, too, of course.
I love the idea for the mini frittatas. This is perfect for adults and kids alike!

My ideal brunch combines sweet and savory! I have such a sweet tooth so I always want some granola, a pancake, or a muffin on the side with something more savory. I like to sauté chopped vegetables and then put eggs right in between them, cover the pan for 5 minutes, and finish with lots of fresh herbs! It creates these wonderful pseudo-poached eggs. I want to try your mango muffin recipe, it looks delicious!
I love my husband’s french toast. Mostly because I don’t have to make it!

If I’m making it, probably biscuits and gravy. If I’m going out for brunch, basically anything but splitting a french toast with a large group AND ordering my meal is my favorite thing to do.

Best special brunch treat is definitely challah french toast! My favorites though are yogurt with granola and fresh fruit, or a smoothie bowl with granola in the summer. Yummmmm.
My favorite brunch option is a Denver omelet. Such a “simple” food but I can’t resist one if it’s on the menu. Bonus points if it comes with a side salad (arugula, of course) and some homefries!

Anything with eggs! My current obsession is toasted sourdough with garlic sautéed spinach and chickpeas with a runny egg on top.
Omelets – there is a restaurant on the water we like to go to for Sunday Brunch on special occasions where there is many amazing and delicious foods but the omelet station is phenomenal. I ask for one egg at a time so if I’d like a second once can be made a little later with totally different ad ins

Favorite brunch food is crepes! I make a batch the night before and then add everyone’s favorite toppings in the morning. I’m more of a sweet crepe kinda gal, while my husband prefers a gruyere/egg/ham crepe.
I LOVE a salmon and egg casserole. With homemade tartar sauce! It sounds weird but it’s sooo good!

French Toast!
My favorite brunch food is a tortilla espanol — also known as a big think omelette with caramelized potatoes and onions. I usually serve it with a green salad with a tangy vinaigrette or a berry salad. I think the next time I will try it with your salad with clementines and mint and watermelon radish. That would be a nice, bright contrast to the earthiness of the tortilla espanol.
