					<description><![CDATA[Loved this &#038; found it very easy to make. I didn’t have time to roast the garlic so put it in with the cauliflower when boiling with skin on then squeezed the garlic into the cauliflower after cooking (also I find roasted garlic can be a little strong in flavour) I mashed with a knob of butter unmelted &#038; Dijon mustard in the saucepan instead of using a food processor. I liked the rustic texture of mashing.

					<description><![CDATA[I just made this - it was fantastic! I am especially impressed with the texture. I have seen recipes that add sour cream or cheese but I wanted a healthier version that tastes good and this checked those boxes. It’s creamy and fluffy enough on it’s own. I did not have time to roast the garlic which would have made it even better.  I did my shortcut that I do with garlic mashed potatoes - I put the garlic in the water along with the florets. Not quite as good but it works. I didn’t have Dijon but I had honey mustard so I added a speck of that. Great idea to add mustard! I always find great recipes on here.
