Our cookbook club loved these today. Empty dish! Easy to stage and phase into a schedule. I did black beans from scratch as I dislike the texture of canned. I see red bell pepper in the picture, but not the recipe. I added some for color and crunch. The coconut "bacon" could stand alone as a nibble. It brings a good salty, sweet and smokey element, but I would not mistake it for bacon. The vegan "sour cream" isn't my favorite, but it worked in this context. A store-bought southwestern bean salad that you like could streamline this recipe.

Hi Jen, it should thicken in the fridge. Give it a stir before you're ready to use it.

Hi! I tried the sunflower cheese as it’s the same recipe as in your cookbook. In that version you say to soak but now mine is very runny. Will it thicken in the fridge?

I can't wait to try this recipe but I have to be honest. I don't want to make a meal for hours on end. I will buy the vegan sour cream and take a stab at coconut bacon.
