Hi Andrea, I think shaved Brussels sprouts would be great! Lacinato kale is also called Tuscan kale or dino kale. It’s darker than curly kale and has smoother edges.

Oh my goodness. This is so delicious! It takes like the salad at our local Mediterranean cafe. I was getting tired of my routine pasta vegetable salads. The lentil page link was quite helpful, as I’m not successful with lentils unless I’m making lentil soup. But these lentil turned out perfectly. They are large green lentils as my store didn’t have French lentils. I made pickled red onions and used them instead of the regular chopped red onions. The dressing is delicious. I used za’tar.
I refer to this wonderful site often and really enjoy the recipes!

This is the best Lentil Salad ever. I make it routinely and it never gets old. Love the olives and feta. I add a bit more kale.
