I have made this soup twice. Both times I used chickpeas instead of the beans and one time I used basmati rice instead of the orzo. The rice was my favorite. This soup is so delicious!!!!

Love this recipe, I've made it now a couple of times. Its a great "in between seasons" soup. Its spring here but still cool with the winds, and this is lighter than some of my hearty winter soups, but does the trick. In addition to the 4 cups of veg broth, I end up adding 1-2cups of water from the boiled kettle to keep it liquid enough as a soup, once the orzo and spinach are fully cooked and expanded. Then add a bit more seasoning salt, pepper and lemon as needed. The fresh HERBS as garnish (I used both dill and flat parsley) put this soup over the top. Not just a pop of colour, they really add to the flavour, do not skip the dill and parsley. YUM.
