Very easy recipe, I think the olive oil was a bit strong personally but I’d make this recipe again trying a more neutral oil

So sorry you were disappointed with the cake, Debby! Was the issue the olive oil flavor? You might like this recipe with a neutral oil like vegetable oil or canola oil instead.

I usually read reviews before I bake but sadly I didn’t until I had mixed it all together. I added juice of 3 lemons, zest of 2 but still could taste olive oil even after covering with more lemon juice and icing sugar. I won’t be making this recipe again. On the plus side it cooked and rose well in 7’’ tin . I feel like I’ve wasted a lot of ingredients!

We have a wheat allergy in the house. So I used Bob’s red mill cup for cup gluten free flower and egg substitute. Also used canola oil as that is what I had on hand. With zest from two lemons. The batter was really tight so I added about a 1/4 cup of almond milk and that loosened is up a little. It is in the oven now. Will update later after the bake. It’s for my son’s birthday cake. Also the one with the wheat allergy.
