Hi Bob, I wonder if you might have had an older bag of beans. We find that this timing works great with fairly fresh beans, but in my experience cooking old dried beans on the stove, I find that they can take significantly more time to soften.

30 minutes? No way!!! I set instant pot to saute for about 15 minutes while I was chopping onions and garlic, letting it get hot, then cooked on HI for 30 minutes then a 45 minute natural release, and they were nowhere CLOSE to done. Cooked on HI for another 40 minutes with an hour natural release, and had to go to bed, so I put them on sous vide at 190 for 4 hours. Woke up this morning, and still tough. So I pressure cooked on HI another 70 minutes, followed by sous vide on 190 for 3 more hours, and finally they are edible. Not completely done, but no longer crisp.

So that's 2 hours 20 minutes of pressure on HI, plus another 7 hours at 190°. No way dried black beans would be done in 30 minutes.

I added a bay leaf. I love that. this is a “pantry’ recipe where the only fresh thing you need is an onion. I thought these would be plain black beans that I would have to make into something else, but they are delicious all on their own. Easy and delicious!
