How to Cut a Mango

Learn how to cut a mango with this step-by-step guide! Then, enjoy the sweet, juicy fruit as a snack, or add it to your favorite mango recipes.

Welcome to How to Cut a Mango 101! Here on Love & Lemons, we have recipes for mango salsa, mango tacos, mango margaritas, and even mango sushi. Suffice it to say, a simple guide on how to cut a mango is way overdue. Cutting a mango isn’t difficult, but if you’re attempting it for the first time, it can be perplexing. Should you peel it first? What shape should the pieces be? And what on earth should you do about that pit? If you’re asking these questions, you’re in the right place! Below, you’ll find my method for how to…

Vegan Tacos

Jerk-spiced jackfruit and mango avocado salsa pack these vegan tacos with a big punch of flavor! They're bright, fresh, and fun to eat.

When I flipped through the Vegan Instant Pot Cookbook by Nisha Vora, these jerk-spiced vegan tacos caught my attention right away. Combining jerk seasoning with ginger, tamari, and meaty jackfruit isn’t something I would have thought of myself. But wow, wow, wow, were these delicious! In the past, I’ve made vegan taco recipes with roasted sweet potato, black beans, a ground beef-like mushroom taco “meat,” and more, but this jackfruit filling is one of my new favorites. It has a fantastic hearty texture and bold, spicy flavor that’s perfectly accented by a sweet and juicy mango avocado salsa. I’m obsessed with…

Spicy Mango, Black Bean & Avocado Tacos

What's more fun and more simple than mango tacos? Almost nothing. Serve these sweet & spicy little guys for a crowd-pleasing weeknight dinner.

I don’t care if it’s taco Tuesday, taco Wednesday, or taco Friday… to me, any day is a good day to stuff things into tortillas! Some people buy a loaf of bread every week as a grocery staple – I buy tortillas. So naturally, my on-hand tortillas came in handy as part 3 of this week’s meal plan. Here are the ingredients that I started with: from the Mango Black Bean Ginger Rice Bowls: – a chunk of green cabbage (always trying to find a use for leftover cabbage!) – black beans – mango – avocado from the Cucumber Nori…

Nori Wraps

If you love sushi but don't love rolling it at home, these easy nori wraps are for you. They taste just as good, especially with spicy mayo drizzled on top!

Meal #2 this week: Nori wraps!  If you missed Monday’s post, I made these Mango Black Bean Ginger Rice Bowls as part of this week’s three meal series showing how ingredients from one meal can work into the next, and then again into one more. I did a similar five part plan a few months ago, and many of you wrote to tell me how helpful it was… so here we are again! At the end of the week, I’ll recap it all with a full grocery list. For this recipe, I started with these ingredients that I had on hand…

Mango Ginger Rice Bowl

This rice bowl is one of our go-to meals when we're craving something light. It's easy to make, and mango, ginger & basil make it wonderfully refreshing.

Welcome to another meal planning week! About a month ago, I wrote a 5-part series that was all about my basic approach to meal planning. This was the plan: I started the week with a set amount of groceries and ideas for 5 meals, each meal utilizing the ingredients from the day before. The “plan” was not set in stone, so that my dinners would be somewhat flexible if I got a new idea mid-way through the week. If you missed that series, check it out here 🙂 After getting such a wonderful response to that series, I thought, let’s…

Mango Coconut Muffins

I love to start my day with these bright mango coconut muffins! They're 100% vegan and have fresh flavor from lime, mango chunks & coconut flakes.

Muffins have such a special place in my heart. Growing up, my family ate muffins for breakfast nearly every day, and it was awesome. My sister and I would *think* we wanted the colorful cereals that the other kids had. We’d beg my mom to buy them and when she would, they’d end up going stale on the top shelf in the pantry. Nothing beat a warm muffin and a big glass of milk first thing in the morning. Of course, I’ve since nixed the milk part, but my love for muffins continues. These mango and coconut muffins are my new favorite morning treat.…

Plus, making this sushi roll is way less expensive than ordering sushi at a restaurant. Sushi Roll-Making Tips! First things first – don’t be scared! The only thing required for “sushi date night” is a bamboo mat and a positive attitude. You need to be in the kind of…

Cauliflower Rice Burrito Bowl

This cauliflower rice burrito bowl is just as good as one from Chipotle, but it's totally different. Plant-based ingredients make it refreshing and fun!

This cauliflower rice burrito bowl delivers all the best parts of a Chipotle burrito bowl – fajita veggies, cilantro lime flavor, plenty of black beans and avocado – and skips the worst part (aka the food coma that comes when you’re done). To make it lighter, I swap seasoned cauliflower rice for regular rice. Then, instead of piling it with cheese or sour cream, I finish it with a creamy cashew green chile sauce. The combination is light, bright, and downright fun. I can’t get enough of it! Cauliflower Rice Burrito Bowl Components Here’s what’s you’ll need to make this…

Heirloom Tomato & Mango Pico

I love pico and I love mango salsa, so I’m not sure why it took so long to come up with the delicious idea to combine the two. This is probably the prettiest salsa I’ve ever made, but I also love the flavor and texture variety that each tomato brings to the table bowl. Cherry tomatoes are sweet, green tomatoes are more tart and firm. I always find myself adding a pinch of sugar to my tomato salsa for balance, but that’s not necessary this time because of the sweet juicy mango. Make a big batch, it’ll keep in your fridge for 3-4 days…
