Mushroom & Quinoa Lettuce Wraps

mushroom & quinoa lettuce wraps / loveandlemons.com

Nutella one day, quinoa the next. This is what I call balance. Tasty balance. Last week, I had this huge head of red lettuce. After a few days of salads, I worked my way down to the small rounded leaves in the center. I thought they were just too cute to tear apart into another salad, so I thought… lettuce wraps. This could be a lovely spring appetizer, or a light meal for two. Especially if you’ve been over-indulging lately like we have been.

Grilled Bell Pepper & Chickpea Salad

A summer salad with red and yellow bell peppers, chickpeas, fresh oregano, and basil! A simple & healthy weeknight dinner for vegans and meat eaters, too.

This Monday, like no other, calls for a healthy start. We got home late Saturday night after spending the week in Chicago. We ate way too many things at way too many places… which is generally how our vacations go. The difference this time is that because we’re food blogging now, I’d make the excuse that we were eating in the name of “inspiration”, or even more ridiculous, “research.” While I might have brought home a few new ideas, I also brought home probably a few extra pounds. So this week is gonna be a healthy one. Yesterday we went to…

Thai Coconut Cucumber Salad

Chilled crunchy summer veggies are tossed with herbs and a spicy, tangy curry coconut dressing. Serve it for a vegan weeknight dinner as a main or side.

I could eat coconut all day in the summertime. Cold, crunchy, spicy salads like this one with a side of coconut iced tea, followed by coconut ice cream for dessert. I ask you, who needs so much dairy when the coconut exists? (Ok, don’t answer that, I know you cheese-lovers are a passionate bunch). I’m calling this one a “Thai-inspired” dish. Jack and I are talking about taking a trip to Thailand next spring (!)… so until then, I bring you “Thai-ish.” Coconut milk, lime, and red curry are flavors that I am crazy about… and here they create a delicious…

Sesame Cucumber Salad

Chilled cucumbers and wakame in a sweet & tangy dressing make a quick & healthy summer condiment or snack. Sesame seeds add crunch. Vegan and gluten free.

This is hands down my favorite hot weather snack. Is it hot where you are? It’s about 95 degrees here and I have about a million cucumbers growing in my garden. Sadly, in this heat, the cucumbers are about all I have growing at the moment. But I’ll take my cucumbers and be happy about them. And make salad. This one is generally in my fridge all summer long because it’s just so quick and easy, and it keeps for days. I also find that it’s a great way to add in sea vegetables. They’re not necessary here: the cucumbers are…

Veggie Sushi with Sunflower Miso Paste

Raw vegan sushi filled with crisp vegetables, creamy avocado, and a tangy, salty sunflower miso paste. A light gluten free meal for spring or summer.

We eat a lot of sushi… probably similar to the rate normal americans consume pizza. I don’t want to make this blog about weight loss, but sushi is my skinny secret. I don’t crave breads like I used to, I crave nori. Sushi at home might seem intimidating, but once you get the hang of it, it’s really not hard. I’m no Jiro or anything: it just takes a bit of a steady hand and some focus (which gets harder with the more sake you consume)… but honestly, if it comes out a little sloppy looking, it’ll still taste good. Don’t…

Seared Tuna Roll with Basil Aioli

A fun home cooking project! Step-by-step recipe for sushi featuring tuna, avocado, and cucumber served alongside a basil aioli. Gluten-free.

Welcome to amateur sushi night… Tonight’s dinner was inspired by the leftover bowl of white rice that’s been sitting in the back of my fridge. We’ve been eating enough stir fries lately and I figured Jack was probably kale-d out. Plus I thought this sounded like “group” fun. (Especially for our little Japanese girl who was standing by for floor droppings). We took a class once about 5 years ago at Central Market and I remembered this blackened tuna roll with 7-spice and basil sauce that I’d been meaning to make again. Of course Jack and I got home from…
